Happy National Daiquiri Day

Quite the delicious Daiquiri.

I considered trying to make my own gomme syrup but did not know where I might find gum arabic and if it would even really make a difference over plain white sugar. Then I went to the grocery store for limes and I found a jar of agave syrup. My brain went agave -> tequila -> lime -> daiquiri and I bought it. It’s very yummy. A bit thicker than the kind of maple syrup that is not super thick and sweeter than honey but not in an overpoweringly sweet way. According to the wikipedia link, vegans like agave syrup as a honey substitute. I forgot that honey might be considered bad…bee slaves.

Back to the daiquiri. I made it with 2 parts white rum, 1 part freshly squeezed lime juice, and about a teaspoon of agave syrup shaken with ice and strained into a cocktail glass. It was the most perfect cocktail that I have ever made (but I don’t mix very good drinks thus tend to stick to beer and wine). I might make it again on Thursday – but with tequila instead of rum ; )
